Description

Brisket on pizza? This delicious pizza is topped with chunks of beefy brisket, red onion, tomato, jalapeños, sweet and heat BBQ sauce, and melted cheese, garnished with fresh cilantro and baked in your Traeger using pecan pellets.


Ingredients

  • 2 tablespoons sugar
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • 4 cups of four
  • Cornmeal as needed
  • 2 packets of active dry yeast
  • 1 cup Traeger sweet and heat BBQ sauce
  • 1/4 cup olive oil
  • 1 pound of leftover brisket chopped
  • 1/2 red onion chopped
  • 1/2 cup grated mozzarella cheese
  • 3 diced tomatoes
  • 1/4 cup chopped cilantro
  • Ranch dressing
  • 2 chopped jalapeños
  • Traeger Prime Rib rub
  • Pecan pellets

Instructions

  1. When making the dough pour warm water in a bowl, add yeast, and stir. Allow it to sit for 5 minutes until it starts to foam. Add salt, oil, and sugar, then add the flour and combine until it forms a dough ball.
  2. Place the dough in a large bowl brushed with olive oil to prevent it from sticking. Then cover the bowl and allow it to rise until doubled in size for about an hour.
  3. Once the dough has risen turn it out on a lightly floured surface and knead it 4-5 times. Allow it to rest for 15 minutes.
  4. Next, cut the dough in half and roll it out ¼ inch in thickness onto 2 greased baking trays sprinkled with cornmeal.
  5. Base each round of dough with Traeger sweet and heat BBQ sauce.
  6. Then add cheese to each pizza and top with chopped brisket, red onion, jalapeños and tomato. Sprinkle a layer of prime rib spice.
  7. Next, preheat the Traeger on high with the lid closed for 15 minutes.
  8. A pizza peel is the best tool to use to slide the pizza onto the grill grate. Bake for 15-25 minutes.
  9. Remove the pizza and allow to rest for 5 minutes sprinkle with cilantro, slice, and serve.
