Have a St. Patrick’s Day hangover? Enjoy this savory Irish breakfast loaded with protein and forget about all the beer you drank the night before.


Ingredients

Units Scale
  • 3 eggs
  • 2 cups cooked hash-brown potatoes
  • 1/2 cup onion chopped
  • 3 tablespoons oil
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • Salt and pepper
  • 2 cups cooked and shredded brisket
  • 1 clove minced garlic
  • Mesquite pellets

Instructions

  1. Preheat the Traeger for 10-15 minutes to 450℉ with a cast-iron skillet on the grill.
  2. Sauté the onion, and peppers in oil until translucent then add the garlic and cook for 3 more minutes.
  3. Next, add the brisket, potatoes, and eggs. Cook for about 10 minutes until the brisket is heated through. Sprinkle with salt and pepper, serve, and enjoy
